Because of this combination, and especially the semi-automatic operation mode, you have a good deal of control over the result and can truly call it your own creation.<br />
Disadvantages<br />
The semi-automatic control described above is a mixed blessing, because it makes coffee making a slow and tedious routine for those who are in a hurry or less fussy about their coffee.<br />
Disadvantages come from the compromises that Gaggia had to make in order to condense the qualities of their professional machines into the size (and the price) of a machine for home use. Gaggia&#8217;s professional machines use a large boiler and an external piston that re-condenses the steam into a hot water aerosol.<br />
Who should not choose the Evolution<br />

The greatest advantage of the Evolution comes from the combination of its modern design and its traditional operation principles. This is the portion of the machine that the portafilter locks into. It is made of chrome plated marine brass, which provides a superior brewing environment through maximum heat stability and component longevity.<br />
Boiler<br />
The Gaggia boiler system is very unique. It is designed of highly conductive aluminum with two heating elements. The heating elements are imbedded into the exterior sides of the boiler, providing even heat distribution. Having the highest wattage system available, incorporated into a low volume boiler (3.5 ounces) provides excellent temperature stability and will heat up quicker.<br />
High Quality Controls with Temperature Ready Light<br />
The Evolution has three rocker arm switches. The one on the top is the main power switch. The middle one is the steam switch that when turned on, will heat the boiler to steam temperature. The bottom switch operates the pump and is known as the brew switch. To start the brewing process, just turn on the switch, wait until you have reached your desired volume and then turn of the switch. There is an indicator light that is illuminated whenever the boiler is up to operating temperature.</p>
<p>	The machine features one of the heaviest portafilters in its class. Made of heavy marine grade brass, and covered with chrome plating, it helps maintain thermal stability in your drink preparation, which gives you the best espresso possible. The Evolution has commercial-standard 58mm filter baskets (one double shot filter basket, and one single shot filter basket that also accommodates ESE pods) that are made of stainless steel. .<br />
	Removable Water Reservoir<br />
	The 44-ounce water reservoir is removable for cleaning and is made of shatter resistant ABS plastic. The water volume is easily seen from the front and sides of the machine, so you’ll always know how much water you have.<br />

Comes ready to use with pods or ground coffee. Use the single shot filter basket with Easy Serve Espresso (ESE) pods. Pods are single serve prepackaged shots that are designed to be quick and clean.<br />
Thermostat and Safety Switches<br />
The Evolution has three temperature controls. There are two thermostats and one high limit. There is one thermostat for maintaining brewing temperature and one for maintaining steaming temperature. The high limit will turn off the power to the boiler in the event of a malfunction this will prevent the boiler from over heating.</p>
<p>	Simple To Use Controls<br />
	The Evolution features three push buttons that control the main functions of the machine. The button farthest to the left turns the machine on or off. When the machine is on, an indicator light to the right of this button will illuminate. In the center sits the brew button, and to the far right is the steam button. Whenever the boiler is heating (when you turn the machine on, or are heating the machine to steam temperature, for example) an indicator light between the brewing and steaming buttons will illuminate. To release steam from the steam wand, simply turn the knob on the right side of the machine.<br />
