One of the newest additions to the Gaggia family introduces the new sleek lines of the Evolution. The housing may be revolutionary but we can thank Gaggia for not messing with a good thing as they kept the internal components the same. The high wattage dual heating element boiler has about the quickest heat up time in the industry. The 55 watt pump has power to spare, and is mounted on vibration resistant rubber mounts. The reservoir is easy to fill. Slide it to the left and pour the water in. You don’t have to remove it from the machine. Gaggia has been tested and approved for use with the world famous Illy pods. Gaggia’s new Turbo-Frother frothing wand is designed to help you get great froth with minimum fuss. The controls are simple and have all the necessary temperature ready lights. Use this espresso machine to its fullest, and each cup will be creamy, tasty, robust, and rich with flavor. The Evolution includes two stainless steel filter baskets (one and two shot), coffee tamper, and 7g measuring scoop. Available in Black.

Commercial Size and Style Portafilter Handle
Some of the most crucial elements for producing high quality espresso are influenced by the Style, Size and Construction of the portafilter. Style: This portafilter is designed like a commercial machine and works in the same way. The coffee is ground fine and is tamped (pressed) firmly into place. Size: The size of the portafilter is also the same as a commercial machine. Is has a large diameter (58 mm) so that the water is distributed evenly over a wide surface area. Construction: The portafilter is made up of two parts, the handle and the filter holder. The handle is made of high quality plastic. The heavy chrome plated brass filter holder keeps the temperature stable throughout the entire brewing process, therefore producing a quality cup of espresso.

Cup Warmer
The Evolution has a small, two cup warmer. It is a passive type heater which means it is heated from the residual heat of the boiler.

Hot Water Dispenser
If you want hot water for any reason, be it Hot Chocolate, Tea or Americanos, it is very easy to do. Just turn on the pump (brew) switch and open the steam knob. Hot water will start to stream out.

Water Reservoir

The machine features one of the heaviest portafilters in its class. Made of heavy marine grade brass, and covered with chrome plating, it helps maintain thermal stability in your drink preparation, which gives you the best espresso possible. The Evolution has commercial-standard 58mm filter baskets (one double shot filter basket, and one single shot filter basket that also accommodates ESE pods) that are made of stainless steel. .
Removable Water Reservoir
The 44-ounce water reservoir is removable for cleaning and is made of shatter resistant ABS plastic. The water volume is easily seen from the front and sides of the machine, so you’ll always know how much water you have.
Heated Cup Stacking Surface
The Gaggia Evolution has a heated cup stacking service that allows you to preheat your cups before serving your beverages. Warm cups are desired in making perfect espresso because you are dealing with very small volumes of liquid, which can be cooled off rapidly if poured into a cold cup.
Removable Drip Tray & Grid
The drip tray is made of durable plastic and removes for easy cleaning and the cup tray is made of polished stainless steel.

Coffee for two
The compact and modern designed Evolution is especially suited for couples who like starting their day with a good cup of coffee. It takes about 10 minutes to make the first two cups of cappuccino, starting with a cold machine, so even if your are in a hurry you can still make it to a coffee for two.
Of course you can make coffee with the Evolution for a larger crowd, but not much larger. There is no official capacity limit (although Gaggia’s owner manual warns that the machine is only suited for home use), but making a round of more than 4-6 cups may be quite a bother, especially if you are using the milk steamer.
The operation of the Evolution is quite easy, but if you want to take the best out of it, you will need to make some effort and learn the basics of the “espresso making ritual”. For once, this means that you will have to read the operation manual and follow the operation instructions almost by the word. But that is not enough – you will also have to learn how to select ground coffee, and – the part that most people find the most challenging – learn how to steam milk. The Evolution is not a forgiving machine, but if you are willing to make the effort and learn how to use it, it will reward you with great results
Who should not choose the Evolution
If you look at your cup of coffee more like a quick get going thing just for yourself, or you make coffee for parties or other large groups, another brand will probably suit you better.
